But, demonstrated by a rare though severe incident reported recently in the Journal of Emergency Medicine, superhot peppers can cause bodily harm. A 47-year-old man, unnamed in the case study, attempted a super-spicy feat - eating a hamburger served with a ghost pepper puree - and tore a hole in his esophagus.

My Mom is 88 and was diagnosed with stage 4 pancreatic cancer back in the first week of June. My Dad is 95 this week and has been taking care of her at home. She has had 5 chemos over the last few months and we had high hopes for improvement. There are a lot of complications with chemo and it isn't a magic bullet. She had to go into the Hospital a few weeks ago for a UTI and an infection in a sore on her leg. After many IV bags of antibiotics and 11 days there the hospital released her to skilled nursing. This has been good for my Dad but I live 40 miles away from them and have been helping him every day. He has decided to stop driving this month. Ah the complications of life....

I often avail of the leaves and the stalks steamed as you would asparagus with butter and salt – especially now as they are right in season – but you can get more adventurous and marinate either in balsamic vinegar and agave syrup and stir frying with shallots. It’s amazing over freshly boiled potatoes – that’s my Irish twist on it _ or you can go Mexicana of course and rustle up a Poblano (mix the hosta with the spinach). If you are having friends over and don’t want agave to feel left out – there’s always tequila.
So while survival manuals and forage pundits may regard hosta as a ‘spinach alternative’ really it is potentially gourmet cuisine – for the most part ignored by western culinary culture. Yet in Greece you can find Hostakopita on the menu, a feta and-filo pie filled with hosta leaves. Delicious. So what’s stopping you? Get to it before the snails. (I would say have it with escargot but that really would be rubbing it in.)
Hostas are coming into their edible prime this month so go on, dine like a snail and with all that boost to immune system and vigour – smile like a warrior.

The best part of the hosta is the ‘hoston’, the rolled up leaf as it emerges in the spring, although many varieties are still pretty good even once they have unfurled. The best way of cooking them depends on the size of the hostons. Small ones are delicious if you fry them for a few minutes, then add a little light soy sauce and sesame oil. The slight bitterness of the hostons complements the saltiness of the soy sauce very well. Similarly, they go very well in stir fries. The chunkier hostons are better boiled briefly and used as a vegetable. In the picture below, the hostons on the right are bound for frying, those on the left are for boiling.

Hostons are best cropped by gripping them firmly near the base and snapping ones off the edge of the clump. If you can snap them off right at the base they will hold together as a whole instead of falling apart into individual leaves. The short leaf scales around the base are bitterer than the larger leaves so they are worth removing. It is much easier to harvest the hostons if the crown of the plant is a little above ground level when it is planted. It is possible to harvest the whole first flush of leaves of an established plant without killing it: ornamental hosta growers will sometimes ‘mow’ their plants to get a second flush of fresh, attractive leaves.

Later on, the open leaves can be used as a general pot herb or substituted for spinach in recipes like ‘hostakopita’. The flowers and flower buds are also edible: the Montreal Botanical Garden lists all species as edible and Hosta fortunei as the tastiest. ...
