I was just outside to grab the mail. It's not warm, but not chilly either, maybe mid 50s. Light breeze and of course full on grey cloudy. Dark enough out to have lights on in the house at 3pm.

The rain is big, splashy drops. Weird, it's raining, but the drops are so big and spaced out. About 25 feet to the mail box and back. I almost didn't even get wet. Sounds nuts, but it's like you could dodge the rain drops. And the rain itself is warm. Is there a such thing as doom rain?

Both sounds tasty. Here's my recipes that I really enjoy. NO forks when flipping the meat, always, always use tongs.

30 minute pork chops

What's needed:
2 thick cut pork chops
1 cup Corn flour
1 cup Corn meal
3 eggs
Some butter (real butter, I prefer unsalted)
Worcestershire sauce
Salt (kosher or sea)
Pepper (fresh ground)
Paprika (smoked if you have it)
Assorted seasoning (Garlic powder, onion powder, etc...as you desire)
Cast iron skillet (no plastic handles)
Two pie pans
Preheated oven @ 350 degrees

Preparation and cooking:
Remove pork chops from fridge so they can come to room temperature while you pre-heat oven and make preparations. Place skillet on stove top over medium-high heat. Mix flour, corn meal, salt, pepper, paprika and assorted seasonings together in one pie pan. Beat eggs, add Worcestershire sauce (tablespoon?) and put in second pie pan. Pat chops dry with paper towel, and soak in egg mixture (both sides). Put egg soaked chops in flour mixture (coat both sides and edges well). Place chops in skillet. Do not flip or move for 5 minutes. Flip and repeat for 5 minutes. Place chops in oven (10 minutes per side). Remove chops from oven, put a pad of butter (tablespoon?) on each chop, cover and let rest for 3-5 minutes then enjoy. Mashed potatoes and gravy are great sides. While chops rest, make gravy in skillet you just cooked chops in using your favorite gravy recipe.



6 to 8 minute steak

What's needed:
2 thick cut steaks (Strip steak or Ribeye are my preferred)
Canola/vegetable oil
Salt
Pepper
Butter
Cast iron skillet (no plastic handles)
Well ventilated kitchen (or grill outside set up with hot side and warm side)

Preparation and cooking:
Remove steaks from fridge so they come to room temperature while oven pre-heats. Place skillet in oven and pre-heat to 500 degrees. Lightly coat steak with oil, liberally coat entire steak with salt and fresh ground pepper. Once oven comes to temp, turn a burner on stove top to high (if using electric let it come up to temperature before you remove skillet from oven). Remove skillet from oven, place on burner, add steaks. DO NOT touch, let them sizzle and pop for 1 minute per side (be advised, creates a lot of smoke). Once you've finished searing both sides, place in oven. 2 minutes per side, medium rare, 3 minutes per side medium (If you want it more cooked than that, let me direct you to the nearest McDonalds...). Remove steaks from oven and skillet, place on plate and put a pad of butter on each. Cover and let rest 3-5 minutes. Enjoy with your favorite side dish.


For both the above recipes the most important parts are making sure your cuts of meat are at room temperature when you start cooking and the rest period at the end. If you do not bring to room temperature the cooking times will be wrong and if do not allow the meat to rest you'll end up with very dry steaks/chops even if you didn't pierce the meat with forks while cooking. The rest period allows the moisture that was being pushed out by heat to be reabsorbed into the cut of meat.

Guess that's because you never saw any stray animals nearby.

That said, duck is very tasty. Goose is too. I think they're both better than any chicken I've ever had. Better than turkey is debatable. Really depends on how the turkey is cooked. Deep-fried for example is very hard to beat.
